Finish forest temple and return to being a young link by placing the master sword back in the pedestal.
The song is Epona's Song you get it from Malon the ranch girl you can always get it, if you want to be young link again just put the Master Sword back in the pedestal and then take it out again when you want to be adult Link. There are still some sidequests you can only do as a child for instance the Mask shop in the main square of Hyrule.
There will always be a way to get the horse. You have to be young Link to learn the song though, and there is a way to turn back time in the game.
[spoiler] You'll learn it at the ranch as ''young'' Link (you can return by going back to the pedestal in the temple where you found the master sword). All you need to do to learn the song is walk up to the ranch girl and show her your ocarina (that's not an innuendo).
Return to Lon-Lon Ranch as an adult and play the song again so Epona can hear you. [/spoiler]
