Final Fantasy!
You could get Final Fantasy VII. It has two bosses named Emerald Weapon and Ruby Weapon. They're side bosses that the story doesn't push you into and they're pretty tough. While not a PS2 game, it can still be played on the PS2.

Kingdom Hearts I and II.This isn't an RPG, but Jak and Daxter is really fun.

My bad, Shadow of the Colossus isn't an RPG, but it is all about boss fights.
Try Kingdom Hearts 1 and 2, or if not try Final Fantasy 9 for PS1.
The Kingdom Hearts games have some great bosses, may I also reccomend FF XII?
Final Fantasy 12 has some great bosses, especially the final one. I also remember when i stumbled accross a hidden esper by mistake, good game
Okage: Shadow King's boss fights were fun, and pretty funny too.
I say Final Fantasy VIII. The whole game is filled with good, optional bosses. I'm talking about the GFs (your summons). There are a lot of summons in this game, and you have to fight them (with an exception of a few) before it can be yours. And they're not just blind fights, you have to really be prepared to fight them, unless you're level 99 of course.

it is kind of an RPG, you gain some stats for finishing it a few times. longer grip etc..
but as everyone has said, Final fantasy's

Legaia 2. It's an underrated RPG with a really sweet combat system and some awesome boss battles. You may also want to check out the Shadow Hearts series. There are a few of them for the PS2. You wouldn't regret that series!

for the people saying final fantasy for ps2... only FFX had memorable boss battles. get that one.Valkyrie profile 2 has great gameplay altogether so I think you will enjoy that one best.
